One of our favorite cookie recipes around here has got to be Alfajores con Dulce de Leche! We usually end up making a few batches of this cookie dough and freezing at least one so we have it on hand when we get a midnight craving!

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1 cup dulce de leche (Dairy-Free Dulce de Leche)
- 1/2 cup dried grated coconut
PREPARATION:
Cream the butter and sugar with an electric mixer. Add the egg yolk and vanilla extract and beat until smooth. Using a wooden spoon, stir in the dry ingredients. Wrap in plastic wrap and refrigerate for 30 minutes. With the oven rack in the middle position, preheat the oven to 350°F. Line a baking sheet with parchment paper. On a floured surface, roll the dough to a thickness of about 1/8". Using a 2.5" round cookie cutter, cut out 18 cookies. Bake until the cookies begin to get a light golden color, about 12 minutes. Let cool completely on the cookie sheet before handling. Spread approximately 1 tablespoon dulce de leche on the underside of a cookie then top it with another cookie. As you put the two cookies together don't worry if the filling comes out on the sides. Use the filling and add extra dulce de leche if needed to smooth around the sides of the cookie sandwich then roll in grated coconut. Store at room temperature.
