Recently a couple of members in our family have had to make dietary changes and rather than cook/bake one recipe with all the junk and then a second recipe with alternatives I have been cooking one recipe for everyone. It has taken some adjustment by some of us but for the most part we don't miss the processed junk we were eating before. We continue to indulge on cookies, tortillas, tamales and breads! So today I share with you an easy recipe you too can bake for friends and family that might be avoiding grains, gluten, dairy and/or they may be vegan. Merry Christmas to you all!
INGREDIENTS:
- 2 cups almond flour
- 1/2 cup maple syrup
Procedure:
Preheat your oven to 250°F. Mix both ingredients in a medium bowl until they are the consistency of regular sugar cookie dough. Wrap in plastic wrap or parchment paper and refrigerate for 30 minutes. Roll out dough between two sheets of parchment paper to approximately 1/4". I like to keep these a bit thick. Remove the top layer of parchment paper. Cut the dough using whatever cookie cutter you decide. Leave space in between the shapes so you can easily remove the excess cookie dough and bake for 15-25 min. Keep a close eye on the cookies because Almond cookies burn easier than regular cookies. Carefully lift the edges of the parchment paper to cool the cookies on a rack. Continue rolling and cutting the dough in a similar manner.
